Organic Se Chung Oolong (Camellia sinensis) is a semi-fermented high grade Green tea, similar to Black tea, but the withering is much shorter and it is allowed to ferment only until the edges of the leaves are starting to turn brown. It has also a shorter fermentation period. Oolong has a delicate flavor and is best enjoyed when the leafs are briefly infused with hot water, which is than poured off. Tea is than re-infused with hot water and served after about one minute. This process may be repeated a few times, resulting in a brew of a different color.
